INGREDIENTS
- 10 oz Made by True biltong slices
- 3.5 oz shaved parmesan cheese (feeling adventurous – then substitute with finely grated shavings from a slab of Made by True biltong instead)
- 35 oz good quality penne pasta (or your pasta of choice)
- 2 cups grated gouda cheese
- 1 cup fresh cream
- 2 cloves fresh garlic
- 1 cup fresh basil, chopped
- 4 tsp spice medley
- 1 bunch of spring onion or shallots
- 2 tbsp butter
- 2 tsp smoked paprika
PREPARATION
- Bring 1 litre of water to a slow boil.
- Add a pinch of salt and a few drops of olive oil.
- Add the pasta and cook until al dente (take care not to overcook your pasta).
- Remove the cooked pasta from the water and drain it in a colander.
- Set aside a cup of pasta stock water.
- Heat a wok or large saucepan on medium heat.
- Fry chopped spring onion/shallots, garlic, and butter until its opaque in color.
- Add the drained pasta and toss the mixture together.
- Pour small amounts of the pasta stock water to release flavor from the wok or pan.
- Reduce the heat and add the cream.
- Gently simmer, then add the grated cheese, spices and chopped basil.
- Add some exquisite Made by True biltong and mix well.
- Once sufficiently creamy, serve the pasta in a pasta bowl (allowing the creamy mixture to settle).
- Serve, adding smoked paprika and a sprinkling of Made by True’s biltong shavings right on top.
- Take your taste buds for a treat and enjoy.
